Ø Materials:
I. Basic materials- 1500 gr of fresh cockle-shells
- 1500 mL of water for boiling
- Some of wood’s charcoal
- 3 spoons of cooking oil for sauted
- 1 stalk of citronella
- 2 cm of galangale, bruised it
- 4 chillis, slice into aslant shape
- 4 green pepper, slice into alslant shape
- 2 cmof gingger, bruised it
- 2 sheets of laurellike
- 4 sheets of lime’s leaves
- 3 tamarinds, dissolved with 200 mL of water, filter it
- 4 spoon of soybean
II. Grinded spices
- 10 chillis
- 5 garlics
- ½ spoon of sugar
- 5 onions
- 1 ½ teaspoon of salt
Ø Steps How To Cooking Hot Sour Sauted Cockle Shells:
- First, boil the cockles until come cooked, dry it.
- Saute the grinded spices withcitronella, galangale, gingger, laurellike, and lime’s leaves until a half cooked.
- Add the chillis and green pepper, mix it well.
- After that, add the cockle, and add admixture of tamarind with soybean.
- Finally, cook until come cooked and the spices come absorbed into the cockle’s meat. Take off and ready to serve…
